Loam Black Bean Brownies

By far the most popular pudding Loam makes, is our gluten free walnut & chocolate brownies. Everyone loves an indulgent sweet end to a meal, which is deceivingly better for you than the real deal.

We’re always on the look out for healthy dessert recipes, which will keep the calorie conscious customers happy, without making the hungry set and lighting boys feel like they’ve been short changed at the end of a meal.

There’s plenty of chocolate brownie recipes on the internet which use canned black beans (or turtle beans) instead of flour, but after trying out a few different recipes we think we’ve cracked one which has the perfect balance of fudgey sweetness, as well as being totally gluten free, dairy free and refined sugar free. We’ve used banana in our recipe, as it helps to keep it moist, but you may want to leave this out if you’re not a massive fan. The nanary taste is very, very faint but it is slightly there from time to time.

They’re so simple to make, and there’s something very satisfying about making a pudding which tastes so delicious, but is actually good for you. These are packed full with with fibre, calcium, magnesium and many more essential vitamins and minerals.

Chuck everything in a food processor or similar, leaving to one side the chopped walnuts and chocolate. If you’re making these totally gluten free, make sure you use gluten free baking powder.

Whizz it all together, scrapping down the side from time to time until everything is totally blitzed and combined.

Empty into a bowl and fold through half the walnuts and the chocolate (This is of course totally optional, and feel free to leave them out, or add in anything else you might want to try, or need to use up).

Spoon the mixture into a small muffin tins, and sprinkle with the remaining bits of walnut and chocolate. Bake at 180C for around 20 mins, or until a skewer comes out clean after poking the largest brownie in the fattest bit.

DIG IN. I’m sure you won’t be disappointed with these little show ponies.
