Loam Sage & Wild Garlic Sunday Eggs In Bed

This is another delicious, easy dish to make. The wild garlic was picked whilst I was back at my mums. You need to pick it whilst it’s still young and fresh and before it’s flowered. I used fresh stuff here, but to preserve it, you can blitz it in a food blender with some olive oil and salt. Will keep in a sterilised jar in the fridge for yonks and you can use it in salad dressings and in pestos etc for a milder garlic flavour.

 

Shopping list

+ Wild Garlic if you can get it, if not just use 1/2 a crushed, chopped bulb of the normal stuff
+ Sage Leaves
+ Free range eggs
+ Sourdough
+ Coconut oil

 

Method

– Slice and grill your bread

– In a saucepan, gently heat some coconut oil & fry some thinly sliced wild garlic & torn sage.

– Crack open your eggs and fry them in the herbs. When almost cooked add some more wild garlic, sage and a good pinch of salt and sprinkle of pepper

– Butter your toast and serve at once. Delicious
