This is an easy, peasy tasty supper.

– Take your haddock, or any sustainably sourced white fish, lightly oil and place in an oven proof dish.

– Blitz some leftover bread, along with some fridge cheese (parmesan, cheddar, whatever you’ve got lying about) with some tarragon, olive oil, a small knob of butter & some salt & pepper.

– Bake in a low – medium oven for 10-15 mins.

– In the meantime, finely chop your leeks and sweat them on a low heat until soft. Mix some of your creme fraiche with lemon, salt & pepper. Split the mixture & mix some in with the warm leeks. Serve the rest as a side.
